Along with running hills and swimming in the overchlorinated pool this week, I emulated Martha Stewart. I'd say I'm a big fan of hers and I used to subscribe to her magazine in high school and I still watch her television show when I can. And since two weeks ago I resolved to myself that I would no longer buy any store-bought baked goods or processed foods(except good bread), I needed to make myself and my family (mostly my sister) some sweet treats since I have a wicked sweet tooth. From Monday through yesterday I baked something different each day. Monday was pumpkin cookies that got consumed too fast to photograph. However, the rest I was able to get some pictures of:

Tuesday was gingery gingerbread mini cupcakes with buttercream frosting. I think these were my favorite of the week. The recipe called for crystallized ginger which I think really made the cupcakes good.

On Wednesday I made chocolate chocolate cookies. Lately they have not been spreading. When I used to make them the cookies would become a big blob during baking and I could never figure out why. I still haven't figured out why they stopped spreading. They were still good though!

For Thanksgiving yesterday I made an almost traditional pumpkin pie. I am not a fan of pie crust though (making or eating) and hoped the guests would be okay with a crushed gingersnap cookie crust instead. There were no complaints! And I also made corn muffins, cranberry sauce, and helped with the mashed potatoes. That all got consumed quickly of course.
And finally, my mother pulled this thing out of the turkey. It's a piece of plastic that was holding the legs together in the bird and my mother couldn't get it out when she was preparing the turkey. What the heck is it!? I don't like the idea of plastic baking in the bird in the oven and then eating the plastic chemicals that possibly leached into the poultry. Gross!

I go back to Illinois tomorrow evening. Break always goes by so fast. But at least U of I gives an entire week to be able to go home. I realized once I enter the working world (aka next year), I may not even be able to get back to NY! That means either I don't have a traditional Thanksgiving or I micromanage the Thanksgiving celebrations with my friends out in California.

whoaaa I didn't realize what a Martha Stewart you are. that's dangerous! everything you make looks soooo yummy :) if you make some uber healthy versions of those treats I am game to eat a bunch :) you'll figure out Turkey Day for next year! you'll probably make a butt load of money and can fly back. otherwise you're always welcome here for a nice Chinese THanksgiving.
My turkey also had that plastic thing and the directions said to leave it in. However, like you, I did not want it IN THERE, so I went to work on it with my kitchen shears and REMOVED the darn thing! How dare they tell me to leave PLASTIC in my turkey for cooking! Did not sound flavorful at all. And you sound like a great cook! Yum! I have some ginger, so you can send me the recipe for those yummy-looking cup cakes! Have a safe trip back to U lof I.
I saw these pics the other day at work (keep in mind that all I can do is make sandwiches and microwave cold pasta for lunch) and I was soooo jealous. Jealous and hungry.
